What’s a Bellini?
The Bellini cocktail was inspired by the 15th-century Venetian painter Giovanni Bellini. The Bellini was first invented in 1948 at Harry's Bar in Venice Italy. Giuseppe Cipriani was the head bartender at the time, and had a strong fondness for Italian White Peaches. He worked long and hard trying to develop a perfect cocktail which would use them as a base, then he tried the simple combination of pureed white peaches and prosecco (Italian Sparkling Wine), and he knew he had something.

Now you can find the Frozen Bellini on many menus across North America. It’s universal appeal and great taste make it a natural addition to your frozen drink menu.

A light, fruity, Italian style sparkling wine is the perfect accompaniment to the peach puree. Try a relatively inexpensive Asti-Spumanti or any other sparkling wine with a high sugar content (an 8 makes an excellent Bellini). When making this cocktail, you should avoid using French Champagne, it's richness of flavor is not a good match for such a fruity cocktail.

Don’t be afraid to experiment either. Many Bellini recipes call for schnapps, vodka, or rum. Create your own Bellini sensation! Don’t stop with Peach or Raspberry, try a Mango, Strawberry or Raspberry Bellini!

1 1/4 oz Sparkling Wine
1/4 oz Peach Schnapps


TWISTED BELLINI
3/4 oz Peach Schnapps
3/4 oz Lime Vodka
4 oz Island Originals Peach Mix
Pour into 2 oz Champagne


FROZEN PEACH BELLINI
4 oz Island Originals Peach Mix
1 1/4 oz Sparkling Wine
Garnish: peach slice


FROZEN MANGO BELLINI
4 oz Island Originals Mango
1 1/4 oz Sparkling Wine
1/4 oz Rum


FROZEN STRAWBERRY BELLINI
4 oz Island Originals Strawberry
1 1/4 oz Sparkling Wine
1/4 oz Rum


FROZEN RASPBERRY BELLINI
4 oz Island Originals Raspberry
1 1/4 oz Sparkling Wine
1/4 oz Rum


BELLINI
4 oz Island Originals Peach Mix
5 oz Chilled Sparkling Wine (float)


Options - float 1/2 oz to 1 oz Raspberry liqueur (Chambord), Raspberry syrup, Sangria or blackberry liqueur


Tip: To get the red ring around the edge of the glass, place your sangria or raspberry/blackberry liqueur at the bottom of the glass prior to pouring the finished drink.

MIXING INSTRUCTIONS
Standard Blender

  • Pour ingredients in the order they are listed (A good "Rule of Thumb": Your liquid ingredients will just cover the blades)
  • Measure your ice with the glass you will be serving the drink in (this will insure a perfect pour)
  • Cover blender cup and turn blender to low setting
  • Blend for at least 45 seconds

  • Pour ingredients in the order they are listed, into the measuring cup
  • Empty measuring cup into IO blending cup
  • Place Blending cup under the lid and make sure it is seated properly
  • Press the #1 (one drink) and let the IO machine do the rest of the work for you
